OLIVE OIL & FETA DIP
Super quick & easy Olive Oil Feta Dip that will impress your dinner guests. It pairs wonderfully with wine and is perfect for those who don’t mind a double dunk!

INGREDIENTS
Mr. Olio Extra Virgin Olive Oil (roughly a cup)
Feta (80-100g)
Sumac & Chili Flakes (optional)
Thyme (4 or 5 sprigs)
Parsley (a small bunch, chopped)
Garlic (8 cloves, sliced)
Chopped almonds & walnuts (or any nuts of your choice)
Bread for dipping

METHOD
1. Add a BIG squeeze of Mr. Olio to a pan on medium heat. Add thyme when hot, and let it sizzle for a couple of minutes (be prepared for some splashing).
2. Move the thyme aside, add nuts and cook until they start to brown.
3.Then add garlic and sumac/chilli flakes, and cook for another minute.
4. Remove from heat and add some more olive oil.
5. Stir in feta, parsley, and a bit of feta brine.
