QUICK & EASY ANCHOVY SOLDIER!
We’re all about loading up on small plates over mains, and anchovy soldiers are easily one of our all-time favourites. But let’s be real—this isn’t some fancy, over-the-top anchovy soldier. Nope, this is the quick, budget-friendly, slapdash, 2-minute version, "perfected" by Mr. Olio.
What You’ll Need:
- Fresh Bread: Go for sourdough, baguette, focaccia—something a step above plain white bread... please.
- Pizza Sauce: Store-bought from your local Italian grocer or homemade (we’ll share our own recipe for that soon).
- Anchovies: Splurge here! Ortiz or Delicius are top-tier picks in our household, there's plenty of other great tinned goodies available.
- Rocket or Basil: For that fresh, herby touch.
- Ms. Olio Pizza Oil: A drizzle of magic with chilli, garlic, oregano, and EVOO vibes.
How to Make It:
-
Grab the Bread: Slice a small piece, rectangular without the crust if you must, I like it so I keep it, then spread it generously with pizza sauce.
-
Toast It Up: Pop it in a pizza oven or toaster oven, anything to get it nice and crisp.
-
Add Anchovies: Lay one (or two, depending on your bread size) on top.
-
Garnish: Add a sprig of rocket and or basil for that finishing flourish.
- Drizzle the Magic: Top it off with a healthy drizzle Ms. Olio Pizza Oil for a kick of chilli, garlic, oregano, and EVOO goodness.
And there you have it... A no-fuss, flavour-packed bite, ready in minutes. Sure, it might not have the same polished look as that $14 soldier you ordered last week at the bougie wine bar, but who cares? It tastes damn good, and that’s all that really matters.
