METHOD
Grate the Onion: Using a standard grater, grate an onion into a large bowl until you have about 1/2 cup of grated onion and its juices.
Soak the Bread: Add the diced bread to the bowl with the onion and mix until the bread absorbs the onion juice. Set this mixture aside for about 5 minutes while you prepare the other ingredients.
Mix the Meatball Ingredients: Add the meat, bread, egg, parsley, garlic, cheese and salt/pepper to the bowl. Use your hands to mix everything together thoroughly.
Form the Meatballs: Measure out heaping tablespoons of the mixture and gently roll them into balls. Repeat until all the mixture is used.
Brown the Meatballs: Heat 1 1/2 tablespoons of olive oil in a large non-stick frying pan over medium-high heat. Add the meatballs and brown them on all sides, about 3-4 minutes.
Transfer the Meatballs: Once the meatballs are browned but not fully cooked through, carefully transfer them onto a plate.
The Sauce: Drizzle some Mr. Olio onto a pan, Add garlic, the chopped shallot, sauté until translucent. Add the the Italian herbs, heat for a minute, add the Sorry Nonna's sauce, bring to a simmer and then turn down the heat.
The Finale: Carefully add the meatballs and let them cook for 8-10 minutes, turning them occasionally to get them all saucy! Cook your pasta in the mean-time. Serve the meatballs on the pasta and garnish with parmesan and parsley!
