The lab results came back showing:

(Lower is better. Extra virgin olive oil must be below 0.8%.)
Polyphenols: 590ppm
These are the natural antioxidants that give fresh olive oil its peppery kick and health benefits.
Peroxide Value: 8.6
A key freshness indicator. The lower the number, the fresher and more stable the oil.
